Active Managerial Control is the incorporation of specific actions and procedures by management to obtain control of foodborne illness risk factors using tools such as the principles of HACCP.
You will gain industry recognition for being a partner in food safety with Maricopa County and the added benefit of providing safe food to your customers. Every other visit to your establishment will be a full comprehensive inspection. The remaining visits will be a verification of your approved standard operating procedures.
You will simply need to share your system with your assigned inspector and he or she will evaluate it to assure that it meets the needs of your establishment based on your level of food preparation.
This inspection will be counted as one of your annual inspections, so it will be posted.
